Escape Hatch Dallas: First Look: Perry’s Steakhouse opens in Frisco with a gorgeous dining room and bar

Houston-based Perry’s Restaurants opened their twelfth outpost Monday night, at Perry’s Steakhouse & Grille adjacent to Stonebriar Centre in Frisco. If you’re a fan of the Perry’s in Uptown Dallas, you’ll no doubt recognize the menu, including their ginormous, seven-finger-tall bone-in pork chop that’s rubbed, smoked and roasted for longer than your dinner takes to eat. Of course, the sliced polish sausages, crispy-edged and stacked like dominos, made the trip north. So did the crunch, cornmeal-crusted asparagus spears glazed with citrus butter and chateaubriand with a trio of excellent sauces (peppercorn-demiglace, biernaise and merlot-truffle).

The place is a real looker, too: a high-key bar to the left, a swanky main dining room to the right,  private dining rooms and a glass-walled kitchen tucked on the sides. The restaurant was crowded with Uptown regulars, many of whom GM Brandon Quinn recognized from the Dallas location.

“A lot of people have been telling us they wanted a high end steakhouse up north, in Frisco, so we decided to fill that need,” Susi Zivanovic, Perry’s beverage director, told me as she mixed a broody whiskey cocktail enhanced with oolong tea and baking spices and a limoncello-enhanced version of a sidecar. While you can order a $18 glass of Perry’s racy house cabernet (Zivanovic says its and Alexander Valley Bordeaux blend made by Amici Cellars) or a $13 glass of Perry’s private label Russian River chardonnay, don’t ask for a Sazerac; Perry’s doesn’t stock any absinthe. They do, though, have a wine wall that might could use a wine angel. Guess that’s close, right?
