Our Story

Butcher Shop Beginnings

In 1979, the Perry family opened its first restaurant: a modest meat market in Houston called Perry's Butcher Shop and Deli. By 1986, Chris Perry persuaded his father Bob to add dining tables, paving the way for an expansion, which quickly gained popularity among loyal customers. Chris was then inspired to continue the family’s legacy, and went on to create Perry's Steakhouse & Grille® in 1993.

Now one of the country's premier, award-winning steakhouses with locations in Denver, Chicago, Birmingham, Miami, Raleigh, Nashville and across Texas, Perry's remains true to its neighborhood butcher shop roots with top quality selection and service.

At Perry's Steakhouse, we're serving up more than steak. In fact, Perry's Famous Pork Chop is one of our unexpected steakhouse specialties. Reminiscent of butcher shops back in the day, each slow-smoked, sizzling prime chop measures seven-fingers high. Our signature recipe, that we have perfected for more than four decades, is rubbed with a secret blend of seasonings, cured and roasted on a rotisserie with pecan wood for up to six hours before it's topped with Perry's signature herb-garlic butter, then carved tableside.

An unexpected steakhouse specialty, Perry’s Famous Pork Chop is a mouth-watering chop measuring seven fingers high – just as butchers would measure back in the day. The signature, sweet, smoky, sizzling chop is hand-selected, rubbed with proprietary seasoning and cured, then roasted on a rotisserie with pecan wood for 4 to 6 hours.

That's why you'll notice the iconic cleaver incorporated into the design of each of our restaurants – in the deli display case, for example.

We ceremoniously chop through each grand opening ribbon with a cleaver to honor our humble beginnings. Think of it as our way of saying thank you to the communities we've served so proudly over the years.
